It is slaughtered on the delivery day under the supervision of municipal slaughterhouses and in accordance with their standards. Feed is stopped nine hours before slaughter, and the carcass is refrigerated for four hours after slaughter to maintain meat quality.

The slaughter includes only the head, liver, heart and kidneys.
