Is this liquid best for washing meat?

There are many beliefs about the correct way to wash meat, often passed down from generation to generation. Among these common beliefs is the use of certain liquids to wash meat before cooking, such as vinegar or lemon, claiming that they kill bacteria and ensure food safety. But are these beliefs scientifically valid? And is there a specific liquid that is best for washing meat? 

 

Why is it not recommended to wash meat with water?

Although washing meat with water may seem logical to remove dirt and bacteria, experts warn against this practice for several reasons: 

 

  • Spread of bacteria: Spraying water on raw meat can spread harmful bacteria such as salmonella and E. coli to surrounding surfaces and utensils, increasing the risk of contamination. 
  • Doesn't kill deep-seated bacteria: Washing meat with water cannot kill bacteria that have penetrated deep into the meat tissue. 
  • Loss of nutrients: Washing meat with water may cause it to lose some of the nutrients on its surface. 

 

Is vinegar or lemon a solution?

Some people believe that soaking meat in a vinegar or lemon solution before cooking helps kill bacteria. While the acids in vinegar and lemon may kill some types of bacteria, they are not effective against all types and do not guarantee the elimination of all contaminants. Additionally, soaking meat in these solutions may alter its taste and texture. 

 

What is the correct way to ensure meat safety?

Instead of relying on washing meat with various liquids, there are more effective ways to ensure meat safety: 

 

  • Personal hygiene: Wash your hands thoroughly with soap and water before and after handling raw meat. 
  • Separate foods: Use different cutting boards for fruits and vegetables and for raw meat. 
  • Cook meat thoroughly: Make sure meat is cooked to a safe internal temperature to kill all bacteria. 
  • Proper storage: Store raw meat in the refrigerator separately from other foods. 
  • Cleaning surfaces and utensils: Thoroughly clean all surfaces and utensils that have come into contact with raw meat with hot, soapy water.
