Okra with Red Sauce and Bone-In Naimi Lamb – Delicious Arabic Recipe

The perfect Arabic lunch isn’t complete without a rich okra stew with tender meat and fresh red sauce…
Bone-in Naimi lamb from Meat & More gives this dish unmatched flavor and tenderness, combined with a rich tomato sauce. Serve with fluffy white rice or warm Arabic bread for a full experience.

✅ Ingredients (Serves 5–6)

🥩 For meat and sauce:
- 1 kg Bone-In Naimi Lamb from Meat & More
- 500 g fresh or frozen okra
- 1 large onion, chopped
- 4 garlic cloves, crushed
- 2 grated tomatoes
- 2 tbsp tomato paste
- 1 tsp dried coriander
- 1 tsp mixed spices
- Salt & black pepper to taste
- 3 tbsp vegetable oil or ghee
- 4 cups hot water

🍚 For the rice:
- 2 cups Basmati rice, washed and soaked 30 minutes
- 3 cups meat stock or water
- Pinch of salt + optional ghee

👨🍳 Cooking Method

1. Heat oil in a deep pot and sauté the onion until soft.
2. Add garlic, then lamb pieces, and brown all sides.
3. Add grated tomatoes, tomato paste, spices, and dried coriander; stir well.
4. Pour in hot water and cook the meat for 1–1.5 hours until tender.
5. Add okra on top of the meat and sauce, and cook gently for 20–30 minutes without excessive stirring.
6. In a separate pot, cook rice by boiling it in stock, then reduce heat until fully cooked.

🍽️ Serving Suggestion

  • - Serve the okra and lamb in a deep dish alongside fluffy white rice.
    - Or for a richer presentation: cut Arabic bread into medium pieces, place on a serving plate, and pour the okra with sauce and lamb over it.
    - Serve with cold green peppers and buttermilk with ice cubes.

    To prevent okra from becoming too slimy, stir gently without overmixing, and make sure it’s fully covered with sauce during cooking.
