Naimi Bone-In Lamb Kabsa – Authentic Saudi Flavor

For those who love Kabsa the traditional way…
Fresh Naimi lamb from Meat & More gives every bite a rich and bold flavor.
A perfect blend of aromatic spices and tender meat, served with seasoned Kabsa rice, creating an unforgettable Saudi dining experience.

✅ Ingredients (Serves 5–6)

🥩 For the meat and broth:
- 1.5 kg Bone-In Naimi Lamb from Meat & More
- 2 large onions, chopped
- 4 garlic cloves, crushed
- 2 grated tomatoes
- 2 tbsp tomato paste
- 3 dried limes (loomi), pierced
- 1 cinnamon stick
- 4 cardamom pods + 4 cloves + 2 bay leaves
- 1 tbsp Kabsa spice mix
- Salt & black pepper to taste
- 4 tbsp vegetable oil or ghee
- 5 cups hot water

🍚 For the rice:
- 3 cups Basmati rice, washed and soaked 30 minutes
- Pinch of saffron soaked in rose water (optional)

👨🍳 Cooking Method

1. Heat oil in a heavy pot, add onions, and sauté until soft.
2. Add garlic, then lamb pieces, and brown until color changes.
3. Add whole spices (cinnamon, cardamom, cloves, bay leaves, loomi) and stir well.
4. Add grated tomatoes and tomato paste, and simmer briefly.
5. Pour in hot water, cover, and cook on low heat until meat is tender (about 1.5–2 hours).
6. Once meat is cooked, strain the broth and keep it.
7. In a separate pot, bring the broth to a boil, add the soaked rice, cover, and cook until rice absorbs the broth and is fully cooked.

🍽️ Serving Suggestion

- Arrange the rice on a large serving platter and place the lamb pieces on top.
- Garnish with dried limes and toasted nuts.
- Serve with cucumber yogurt salad or traditional Saudi daqoos sauce.
