How to make freekeh soup with fresh veal pieces

An authentic Saudi-Levantine recipe, popular in homes during winter and during special occasions.
Meat & More's fresh veal cubes are slowly cooked with grits, onions, and warm spices, resulting in a flavorful, protein-packed soup that's satisfying from the first bite.
✅ Ingredients (serves 4-5 people):
- 400g fresh diced veal from Meat & More
- 1 cup of freekeh (soaked for 30 minutes and washed)
- 1 large chopped onion
- 2 crushed garlic cloves
- 1 tablespoon tomato paste
- 4 cups of meat broth or hot water
- 2 tablespoons of oil or ghee
- A pinch of cinnamon + a pinch of cumin + salt + black pepper
- 1 bay leaf + 1 cinnamon stick (optional)
👨🍳 Preparation method:
1. In a deep saucepan, heat the oil or ghee, and add the meat cubes until browned on all sides.
2. Add the onions and stir until wilted, then add the garlic, tomato paste, and spices, and stir until the ingredients are combined.
3. Add the drained freekeh and stir it into the mixture for a minute.
4. Pour in the broth (or hot water), and reduce the heat.
Cover the pot and let it cook on low heat for 40–60 minutes until the meat and farik are fully cooked.
🍽️ Serving suggestion:
Serve hot in deep bowls, sprinkled with parsley or green coriander.
- Can be served with toasted bread or lemon on the side.
💡 Chef's Tip:
For a stronger flavor, use real beef broth instead of water...and let the soup rest for 5 minutes before serving to intensify the flavors.
