How to make Shish Tawook with Garlic Sauce

Ingredients:

  • Eight large pieces of chicken fillet
  • 1 cup of yogurt
  • ½ cup of olive oil
  • ¼ cup of lemon juice
  • ¼ cup of white vinegar
  • 2 tablespoons of soy sauce
  • 2 tablespoons of tomato sauce
  • 1 tablespoon of paprika
  • 1 teaspoon of ground cardamom
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of chili powder
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of ground coriander
  • 2 teaspoons of salt
  • 1 onion, cut into cubes
  • Bell peppers, cut into cubes
  • Wooden skewers

Garlic Sauce Ingredients:

  • ½ tablespoon of lemon juice
  • 6 small tablespoons of starch
  • ½ cup of corn oil
  • 1 teaspoon of salt
  • 4 cloves of minced garlic
  • 2 cups of water

Serving Ingredients:

  • Chopped parsley
  • Arabic bread
  • Chopped pickles
  • Sliced onions

Instructions:

  • 1- Cut the chicken into medium-sized cubes.
  • 2- Prepare the marinade: In a deep dish, combine the marinade ingredients using a whisk. Then, add the chicken to the marinade and mix well. Cover the container and leave the chicken in the marinade for several hours or overnight to absorb the flavors.
  • 3- Prepare a wide baking tray and place parchment paper at the bottom. Then, thread the Shish Tawook and the vegetables onto wooden or metal skewers, and place them on the tray. Drizzle them with olive oil.
  • 4- Preheat the grill to the highest temperature, then grill the chicken for about twenty minutes, turning the skewers to ensure all sides are evenly cooked.

Preparing the Garlic Sauce:

1- Prepare a small saucepan and add the water and starch to it. Heat the saucepan on low heat while continuously stirring the starch in the water until it dissolves completely using a whisk. Then, pour the dissolved starch into a wide bowl and let it cool.

2- Then, put the warm starch in the blender with the garlic and salt, and start the blender while adding the olive oil in a thin stream until the mixture thickens, and the oil begins to appear on the surface. Then, add the lemon juice to the Garlic Sauce while continuing to blend until you get a white, mayonnaise-like consistency. Then, place the Garlic Sauce in a glass container and leave it in the refrigerator for about an hour to cool before serving.
