Spicy beef tortilla wraps served with guacamole

 

This Spicy Beef Tortilla Wrap recipe combines the taste of tortillas with the delicious, world-famous spicy beef stroganoff, making it a complete, protein-rich meal. Let's learn about the recipe's ingredients and preparation method together.

  • 500 grams of beef stroganoff . 
  • 4 tablespoons butter . 
  • 2 tablespoons olive oil . 
  • 1 large red onion, thinly sliced. 
  • 3 crushed garlic cloves . 
  • 1 red hot pepper, thinly sliced. 
  • 2 tablespoons paprika. 
  • 2 tablespoons cumin . 
  • 1 tablespoon oregano. 
  • ¼ cup + ½ cup meat and vegetable broth. 
  • 3 tablespoons flour. 
  • 3 tablespoons tomato paste. 
  • 4 fresh tomatoes, pureed (prepared in advance). 
  • ½ teaspoon garlic powder. 
  • ½ teaspoon onion powder. 
  • 1 teaspoon ground chili pepper (optional). 
  • 1 cup canned red beans, rinsed and drained. 
  • 8 flour tortillas. 
  • 1 cup (150 g) grated white cheddar cheese. 
  • 1 cup (150 g) grated red cheddar cheese. 
  • avocado. 
  • ½ cup finely chopped green coriander. 
  • 2 crushed garlic cloves. 
  • 2 green onions. 
  • 2 lemons juice. 
  • 1 tomato, cut into very small pieces. 
  • 2 tablespoons salt. 
  • 1 tablespoon black pepper. 
  • 2 tablespoons jalapenos for garnish. 
  • 100g ½ cup sour cream for serving. 

 

Preparation method:

 

  • In a saucepan over medium heat, melt some of the butter with the olive oil, then add the fillet steak slices and brown, turning occasionally, over medium to high heat until browned. 
  • When the meat changes color, add the chopped onion, then the crushed garlic and sliced ​​hot peppers, stirring. Add the paprika, cumin, and oregano, and season the meat mixture with salt and pepper. 
  • Finally, add half a cup of meat broth, cover the pot, reduce the heat, and leave it until the meat is cooked. 
  • In another saucepan over medium heat, melt the remaining butter and olive oil. Stir in the flour, then add the tomato paste and chopped tomatoes. Add the remaining broth, stirring continuously to avoid any clumps in the sauce. Add all the spices listed above, along with salt and black pepper. 
  • Cover the sauce and simmer for five minutes, then set aside. 
  • Spread the prepared meat mixture into individual tortillas, along with a little red beans and grated cheese. Wrap them tightly and place them in a rectangular baking dish in the preheated oven, along with a portion of tomato sauce. 
  • Pour the remaining tomato sauce over the top, then spread the remaining cheddar cheese over it. Bake in the oven at 250°C for 20 to 30 minutes, or until the cheese turns golden brown. 
  • Served hot with guacamole, sour cream, and jalapeno slices. 
  • How to prepare guacamole sauce: 
  • Cut and peel the avocado and place it in an electric food processor, add the lemon juice, coriander, garlic cloves and green onions, and blend well until it becomes a relatively coarse paste. 
  • Transfer to a serving dish, add the chopped tomatoes and season with a little salt and pepper.
