Oven-baked cow's foot casserole

Serves: 6 people

Ingredients

Cow's feet : 1–1.5 kg (half boiled)

Onion: 1 large (chopped), Garlic: 6 cloves

Tomatoes: 2 grated + Tomato paste: 2 tbsp

Spices: salt, pepper, cumin, dried coriander, bay leaves

Vinegar/Lemon: 1 tbsp (optional)

Ghee/Oil: 3 tablespoons

Preparation method

(1) Boil the trotters with bay leaves and soft onions until tender (reserve the broth).

(2) In a pot: Sauté the onions in ghee, then add the garlic.

(3) Add the tomatoes, paste, and spices, and stir for 5 minutes.

(4) Add the trotters and enough broth to cover them halfway.

(5) Transfer it to an oven dish and cover it with aluminum foil.

(6) Place it in a 180° oven for 45–60 minutes until the sauce thickens and the color becomes rich.

Chef Meat & More Notes

Serve with white rice or tandoor bread.

If you want a stronger flavor: a light sprinkle of cinnamon in the sauce.
