Original Italian Osso Buco Recipe

Serves: 4 people

Ingredients

Osso Poko (Bone-in Banana Slices) : 4–6 slices

Lightly floured for coating, salt and pepper

Olive oil + butter: 2 tablespoons each

Onion: 1, Carrot: 1, Celery: 1 (finely chopped)

Garlic: 2 cloves

Tomato sauce: 1.5 cups or grated tomatoes

Beef broth: 2–3 cups

Bay leaves: 2 + thyme/rosemary (optional)

For serving (Gremoulata): Lemon zest + minced garlic + parsley

Preparation method

(1) Season the osso buco slices with salt and pepper and coat them with a light layer of flour.

(2) Brown the slices in a heavy pan with oil and butter until they are browned on both sides, then remove them.

(3) In the same pot: Sauté the onions, carrots and celery until soft, then add the garlic.

(4) Add the tomatoes and stir for 2–3 minutes, then add the broth and bay leaf.

(5) Return the meat to the pot and reduce the heat very low. Cover and let it cook slowly for 1.5–2 hours until tender.

(6) Serve the osso buco with the sauce, and sprinkle gremolata over it.

The classic serving is with risotto or mashed potatoes.
