📋 Ingredients

  • Golden Basmati Rice - 1 kg
  • Calf liver - 500 grams
  • Yellow butter - 2 tablespoons
  • Vegetable oil – 4 tablespoons
  • 1 medium red onion
  • Sugar - 2 tablespoons
  • Ground cinnamon – 2 teaspoons + 2 cinnamon sticks
  • Ground cardamom – 1 teaspoon
  • Seven spices - 2 teaspoons
  • Two bay leaves
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Meat or chicken broth - 1 liter
  • Almonds - 1 cup
  • Peeled hazelnuts - ½ cup
  • Raisins - ½ cup

👩🍳 Preparation method

  1. Fry the rice in butter and oil until light brown.
  2. In another pot, brown the liver with oil and butter, then add the onions and spices (cinnamon, allspice, salt, pepper).
  3. Caramelize the sugar with a little water until it dissolves, add the broth and spices (bay leaf, cardamom, cinnamon) and let it boil.
  4. Pour the broth over the rice with the cinnamon sticks, let it boil, then reduce the heat until cooked.
  5. Serve the rice garnished with the liver, nuts and roasted raisins.
