Alexandrian Liver - with Tahini and Toasted Bread

Looking for a quick, homemade Alexandrian liver recipe? Meat & More's recipe combines the tenderness of liver with the goodness of tahini, offering a flavorful yet easy-to-prepare dish. Perfect for a quick lunch or a light dinner.

✅ Ingredients:

- 500g Meat & More calf or lamb liver (thinly sliced)
- 2 crushed garlic cloves
- 2 tablespoons white vinegar
- 1 teaspoon cumin
- 1 teaspoon dried coriander
- 1 green hot pepper (or to taste)
- Salt and black pepper to taste
Juice of half a lemon
- Vegetable oil


🔹 Tahini:

- 3 tablespoons of tahini
- Lemon juice
- A crushed garlic clove
- Salt + cold water to thin according to the consistency


🔹 Submission:

- Toasted country bread or grilled toast slices
- Tomato slices and pickled cucumbers (optional)

👨🍳 Preparation method:

1. In a hot frying pan, add 1 tablespoon of oil and heat well.
2. Add the liver slices and sauté for 2–3 minutes until they change color.
3. Add garlic, chili pepper, vinegar, cumin, coriander, and spices.
4. Leave the liver on high heat, stirring, until it is cooked and slightly browned (6–8 minutes).
5. Add lemon juice and remove from heat immediately.

Chef's Tips:

• Prepare a serving dish, pour the tahini sauce into it first.
• Place the hot liver directly on top.
• Serve with toasted local bread, and garnish with lemon slices and pickles.
