How to Cook (by Chef Meat & More)
• Oven Roast (classic): Pat dry, season, sear in a hot pan. Roast at 160–175°C to 54–57°C (medium-rare) or 60–63°C (medium). Rest 15 min, then slice.
• Reverse Sear: Roast low at 110–120°C to ~50–52°C, rest 10 min, then sear all sides in a hot pan for a crust.
• On the Grill: Sear over high heat, finish over indirect heat to your target temperature.
Always use a meat thermometer for best results.
