🍛 Pakistani Beef Edam with Curry

Ingredients:

  • 1 kg beef, sliced into pieces
  • 2 finely chopped onions
  • 5 cloves minced garlic
  • 5 tbsp yogurt
  • 2 chopped tomatoes
  • 2 tbsp tomato paste
  • 1 tsp ginger
  • 1 tsp cardamom
  • 1 tsp cloves
  • 1 tsp curry
  • Ground chili pepper to taste
  • Bay leaves
  • 2 cinnamon sticks
  • 1 tsp turmeric
  • Water (as needed)

Preparation:

  1. Sauté onions in a little oil until translucent.
  2. Add beef and garlic, season with spices, and stir well.
  3. Add water to cook the beef.
  4. Mix yogurt, water, tomato paste, and tomatoes in a bowl, then add to the pot.
  5. Stir well, cover, and let simmer until the beef is fully cooked.
  6. Serve hot with vegetable or Pakistani rice.

Ingredients:

  • 2 tbsp vegetable oil
  • 750 g ground beef
  • 1 yellow onion
  • 1 large carrot
  • 1.5 tbsp chopped ginger
  • 1.5 kg potatoes
  • 2 tbsp light brown sugar
  • 1 chicken bouillon cube
  • 1/2 cup broth
  • Water as needed
  • 1/4 tsp soy sauce
  • Salt to taste
  • 2 sliced green onions (optional)

Preparation:

  1. Heat oil in a pot, add ground beef, and cook until browned.
  2. Add onion, carrot, and ginger, stir for 2 minutes.
  3. Add potatoes, sugar, bouillon, broth, water, and soy sauce.
  4. Simmer on low heat until potatoes and carrots are tender (about 30 min).

🧀 Oven-Baked Beef Edam with Cheese

Ingredients:

  • 2 kg Edam cheese balls
  • 500 g ground lamb
  • 3 tbsp butter
  • 1 tbsp vegetable oil
  • 1 cup chopped onion
  • 1 ripe tomato + 1/4 cup canned diced tomatoes
  • 1/4 tsp ground red pepper
  • 1/2 tsp salt and black pepper
  • 1/4 cup breadcrumbs
  • 6 small olives, chopped
  • 1 tbsp chopped Aleppo pepper
  • 2 tbsp seedless raisins
  • 1 beaten egg

Preparation:

  1. Prepare cheese shells by hollowing them, soak in water for 1 hour, and drain.
  2. Grate cheese to make 2 cups and set aside.
  3. Brown the lamb briefly and prepare onion-tomato mixture in butter and oil.
  4. Combine lamb, grated cheese, breadcrumbs, olives, Aleppo pepper, and raisins. Add beaten egg.
  5. Fill mixture into cheese shells, cover with lids, and bake at 175°C for ~20 minutes until browned.
