📦 Ingredients

  • 1 kg of Fresh Camel Back Ribs (Faqaar) from Meat & More

  • 2 chopped onions

  • 3 crushed garlic cloves

  • 1 tsp ground coriander

  • 2 tbsp tomato paste

  • Whole spices (cardamom, cloves, cinnamon)

  • 1 beef stock cube + mixed spices

  • 3 cups long-grain rice (soaked 20 mins)

  • 4 cups hot water

  • 2 tbsp ghee or camel fat


👩🍳 Preparation Method

  1. In a pressure cooker, heat ghee or camel fat and sauté onions until softened.

  2. Add garlic, ground coriander, whole spices, stock cube, and tomato paste.

  3. Add the camel faqaar meat, stir well, then pour in the hot water.

  4. Close the lid and cook for 40 minutes until the meat is tender.

  5. Open the cooker, add rice on top of the meat, close again and cook for 10 minutes.

  6. Serve the Kabsa garnished with nuts or raisins as desired.
